Ingredients list for Coffee Cake - SK Khazana

  • 1/4 cup Coffee decoction
  • 100 grams Butter
  • 3/4 cup Castor sugar
  • 2 Eggs
  • 1 teaspoon Vanilla essence
  • 1 1/2 cups Biscuits ground
  • 1/2 cup Cocoa powder
  • 1/2 teaspoon Baking powder
  • as required Fresh cream
  • to garnish Icing sugar

Method

  1. Preheat the oven to 180º C.
  2. Take butter in a bowl, add castor sugar and beat with an electric hand blender till the mixture is pale and fluffy.
  3. Add eggs, one at a time, and beat well till light peaks are formed.
  4. Add vanilla essence and mix well. Add ground biscuits, cocoa powder and baking powder. Gently cut and fold the mixture till well mixed.
  5. Add coffee decoction and fold into the mixture. Transfer the batter into cups.
  6. Put cream in a piping bag and pipe out cream on top of the batter and spread it with a toothpick to create a design.
  7. Keep the cups in the preheated oven and bake for 20-25 minutes.
  8. Bring the cups out of the oven, let them cool slightly. Sift icing sugar on top and serve immediately.
