Ingredients list for Coffee Cake - SK Khazana
- 1/4 cup Coffee decoction
- 100 grams Butter
- 3/4 cup Castor sugar
- 2 Eggs
- 1 teaspoon Vanilla essence
- 1 1/2 cups Biscuits ground
- 1/2 cup Cocoa powder
- 1/2 teaspoon Baking powder
- as required Fresh cream
- to garnish Icing sugar
Method
- Preheat the oven to 180º C.
- Take butter in a bowl, add castor sugar and beat with an electric hand blender till the mixture is pale and fluffy.
- Add eggs, one at a time, and beat well till light peaks are formed.
- Add vanilla essence and mix well. Add ground biscuits, cocoa powder and baking powder. Gently cut and fold the mixture till well mixed.
- Add coffee decoction and fold into the mixture. Transfer the batter into cups.
- Put cream in a piping bag and pipe out cream on top of the batter and spread it with a toothpick to create a design.
- Keep the cups in the preheated oven and bake for 20-25 minutes.
- Bring the cups out of the oven, let them cool slightly. Sift icing sugar on top and serve immediately.
