Ingredients list for Coconut Cream
- 1 cup Jasmine rice
- 4 cups Coconut milk
- 3 tablespoons Mixed fruit jam
- 1/2 Lemon
- 1/4 cup Sugar
- 1/2 cup Cream
Method
- Cook Jasmine rice in coconut milk in a deep non-stick pan till soft and thick Heat a non-stick pan, add mixed fruit jam and let it melt.
- Add ¼ cup water and mix. Add juice of ½ lemon and mix.
- Add sugar to the rice and stir till it dissolves.
- Switch off the heat. Add cream and mix.
- Take 4 shot glasses, put 2 tbsps of the jam sauce in each glass.
- Top it with the coconut rice mixture and serve hot or cold as per your choice.
