Ingredients list for Cinnamon and Cranberry Loaf
- 1 teaspoon Cinnamon Powder
- 1 1/2 cups Cranberries
- 1 cup Refined flour (maida)
- 1/2 teaspoon Baking powder
- 1 1/2 cup Butter
- 1 1/2 cups Castor sugar
- 3 Eggs
- 1 tablespoon Vanilla essence
Method
- Preheat the oven at 180° C.
- Mix refined flour and baking powder in a bowl. Add three-fourth cup of cranberries, mix well and set aside.
- Cream together butter and castor sugar in another bowl with a hand blender till creamy.
- Add eggs, one by one, and beat well.
- Add vanilla essence and cinnamon powder and mix well. Add the flour mixture and lightly fold in till well blended.
- Pour batter into a silicon loaf mould till three-fourth full, spread the remaining cranberries on top. Keep the mould in the preheated oven and bake for twenty-five to thirty minutes.
- Remove from oven, cool down to room temperature. Remove from mould, slice and serve.
