Ingredients list for Cinnamon and Cranberry Loaf

  • 1 teaspoon Cinnamon Powder
  • 1 1/2 cups Cranberries
  • 1 cup Refined flour (maida)
  • 1/2 teaspoon Baking powder
  • 1 1/2 cup Butter
  • 1 1/2 cups Castor sugar
  • 3 Eggs
  • 1 tablespoon Vanilla essence

Method

  1. Preheat the oven at 180° C.
  2. Mix refined flour and baking powder in a bowl. Add three-fourth cup of cranberries, mix well and set aside.
  3. Cream together butter and castor sugar in another bowl with a hand blender till creamy.
  4. Add eggs, one by one, and beat well.
  5. Add vanilla essence and cinnamon powder and mix well. Add the flour mixture and lightly fold in till well blended.
  6. Pour batter into a silicon loaf mould till three-fourth full, spread the remaining cranberries on top. Keep the mould in the preheated oven and bake for twenty-five to thirty minutes.
  7. Remove from oven, cool down to room temperature. Remove from mould, slice and serve.
