Ingredients list for Christmas Pudding
- 3/4 cup Refined Flour
- a pinch Spices
- 3/4 cup Bread crumbs
- 4 tablespoons Butter
- 1/2 teaspoon Cinnamon powder
- 1/2 teaspoon Nutmeg powder
- 1/2 teaspoon Mace powder
- 1/2 teaspoon Lemon rind
- 1/2 cup Brown sugar
- 1/2 cup Raisins
- 1/2 cup Sultanas
- 1/4 cup Cherries
- 1/4 cup Candied lemon finely chopped
- 1/4 cup Almonds blanched, peeled and chopped
- 1/2 cup Carrot peeled & finely chopped
- 3 Eggs beaten
- 1/2 cup Orange juice
- 2 tablespoons Sherry
- 2 tablespoons Rum optional
Method
- Sieve flour and salt together. Mix in breadcrumbs with the flour. Rub in butter into the flour and breadcrumb mixture.
- Add spice powders, lemon rind, sugar, dried fruits, candied peels and nuts. Add carrot, lightly beaten eggs and orange juice.
- Add sherry, rum and leave it covered overnight. Next day transfer the batter into two moulds, cover with greaseproof paper and foil and then steam in a double boiler continuously for seven hours at a steady temperature.
- When done cover and keep it overnight in a cool place. Reheat for atleast two hours before serving.
