Ingredients list for Chocolate and Coconut Soft Cake
- ½ cup Dark chocolate chopped, melted
- ¼ cup Desiccated coconut
- + for dusting Refined flour (maida) ? cup
- ¾ cup Icing sugar
- + for greasing Butter 8 tablespoons + 1 teaspoon
- 3½ Eggs
- ? cup Castor sugar (caster sugar)
- 1 teaspoon Vanilla essence
Method
- Preheat oven to 180º C. Grease a round cake tin with some butter and dust with some flour.
- Cream together icing sugar and butter in a bowl till light.
- Sift flour into the mixture and fold in well.
- Beat together eggs and castor sugar in another bowl till fluffy. Add this to the butter-sugar-flour mixture and mix well.
- Add desiccated coconut and chocolate and mix. Add vanilla essence and mix till well combined into a batter.
- Pour the batter into the prepared tin, place the tin in the preheated oven and bake for 20-25 minutes. Remove from oven, cool and remove from the mould.
- Cut into wedges and serve.
