Ingredients list for Chocolate and Coconut Soft Cake

  • ½ cup Dark chocolate chopped, melted
  • ¼ cup Desiccated coconut
  • + for dusting Refined flour (maida) ? cup
  • ¾ cup Icing sugar
  • + for greasing Butter 8 tablespoons + 1 teaspoon
  • 3½ Eggs
  • ? cup Castor sugar (caster sugar)
  • 1 teaspoon Vanilla essence


  1. Preheat oven to 180º C. Grease a round cake tin with some butter and dust with some flour.
  2. Cream together icing sugar and butter in a bowl till light.
  3. Sift flour into the mixture and fold in well.
  4. Beat together eggs and castor sugar in another bowl till fluffy. Add this to the butter-sugar-flour mixture and mix well.
  5. Add desiccated coconut and chocolate and mix. Add vanilla essence and mix till well combined into a batter.
  6. Pour the batter into the prepared tin, place the tin in the preheated oven and bake for 20-25 minutes. Remove from oven, cool and remove from the mould.
  7. Cut into wedges and serve.
