Ingredients list for Chocolate Risotto
- 1 cup Risotto rice
- 1 1/2 cups Dark chocolate chopped
- 3 tablespoons Butter
- 1 Vanilla pod
- 2 cups Milk
- 1/2 Orange
- 2 1/2 tablespoons Sugar
- 1/4 cup Cream
Method
- Heat butter in a deep non-stick pan, add risotto rice and saute for 2 minutes. Add 1½ cups water and cook.
- Slit vanilla pod, remove seeds and add to the pan. When the rice is almost done add 1 cup milk, mix and continue to cook.
- Grate the rind of orange or finely slice the orange peel.
- Add 1 cup milk to the rice and mix. Scrape the walls of the pan and add to the cooking mixture.
- Add sugar and mix. Add dark chocolate and mix till chocolate melts. Add cream and orange rind, mix and cook for 1 minute.
- Transfer into a serving bowl and serve hot garnished with orange peel strips.
