Ingredients list for Chocolate Mud Cake
- 180 grams Dark chocolate
- 150 grams + for greasing Butter
- 3 tablespoons Cocoa powder
- 1¼ cups + for dusting Refined flour (maida)
- ¾ cup Castor sugar
- 1 tablespoon Vanilla essence
- 3 Eggs
- 1 teaspoon Baking powder
- 1 tablespoon Coffee powder
Method
- Preheat oven at 180ºC. Grease a baking tin with some butter and dust with some flour.
- Chop chocolate, transfer in a bowl and melt in the microwave. Remove from heat and whisk till smooth.
- Cream butter and castor sugar in a bowl with an electric beater till smooth and creamy.
- Add vanilla essence and eggs, one by one, and beat well until well combined. Add melted chocolate and beat again.
- Sieve flour and cocoa powder into the mixture. Add baking powder and fold till well combined.
- Dissolve coffee powder in some warm water and mix well to make a concoction. Add the concoction to the flour mixture and fold well.
- Pour the batter in the prepared tin, tap the tin to level, put the tin in the preheated oven and bake for 40-45 minutes. Remove from heat and let it cool.
- Serve topped with a chocolate ganache.
