Ingredients list for Chocolate Mint Cookies
- ½ cup Dark chocolate chopped
- 15-20 Mint leaves chopped
- 1½ cups Butter
- 1 cup Powdered sugar
- 2 cups Refined flour (maida)
- 1 cup Rice flour
Method
- Preheat oven to 180° C. Line a baking tray with silicon mat.
- Cream together butter and powdered sugar in a bowl with an electric beater.
- Cream together butter and powdered sugar in a bowl withan electric beater.
Add mint leaves, sieve in refined flour and rice flour, mix and whisk well. Mix the mixture till well combined. - Divide the mixture into equal portions, shape into balls and flatten lightly. Place on a baking tray.
- Place the tray in the preheated oven and bake for 10-15 minutes. Remove from oven and cool.
- Take dark chocolate in a microwave proof bowl. Place the bowl in the microwave and heat for 30 seconds. Remove from microwave, mix well till melts and coolsdown to room temperature.
- Coat the top of each cookie into melted dark chocolate, place on the tray and let the chocolate half set. Use the back of a fork to create a pattern.
- Serve.
