Ingredients
- 2 medium onions, sliced into rings and layers separated
- 1 cup cheddar cheese, grated
- ½ cup mozzarella cheese, grated
- 1 chicken breast, boiled and shredded
- 8 white bread triangle slices
- 1 tablespoon butter
- A pinch of salt
- 2 thyme sprigs
- ½ teaspoon sugar
- French fries to serve
Method
- Heat butter in a non-stick pan, melt it and add onion rings, salt, thyme and sugar. Cook till the onions are golden brown. Discard the thyme once onions are cooked.
- Take 2 bread slices and apply melted butter on all sides. On bread add 6-7 caramelised onions, 3 tbsps shredded chicken, 3 tbsps cheddar cheese and 3 tbsps mozzarella cheese. Cover on top with another slice. Set aside.
- Heat a non-stick pan, add the sandwich and cook on one side till golden brown, flip and cook other side till golden brown and cheese melts.
- Cut the prepared sandwich into half and transfer on a serving plate.
- Serve hot with French fries.
