Chicken Pizza

Ingredients

  • 400 grams chicken mince
  • 2 teaspoons mixed herbs
  • 1 teaspoon crushed black peppercorns
  • 2 teaspoons onion powder
  • 1½ teaspoons garlic powder 
  • ¾ teaspoon chilli powder
  • Salt to taste
  • 1 tablespoon cornstarch
  • 3 eggs
  • Oil for greasing + for deep frying
  • Powdered cornflakes as required
  • Pizza sauce as required
  • 100 grams mozzarella cheese
  • Dried red chilli flakes for sprinkling
  • Dried mixed herbs for sprinkling
  • A few basil leaves

Method

  1. In a large bowl, add chicken mince, mixed herbs, crushed black peppercorns, onion powder, garlic powder, chilli powder, salt and cornstarch.
  2. Break in an egg and mix till well combined. Place a plastic sheet on it, and add the chicken mixture to it. Grease your hand with oil, pat and spread the mixture to form a pizza base. Cover with another plastic sheet and freeze till firm.
  3. Break the remaining eggs in a large thali, add salt, 2 tablespoons water and whisk well using a fork. Dip the chicken pizza base from both sides.
  4. In a large plate, add powdered cornflakes, add salt and mix well. Coat the chicken pizza base with it on both sides. 
  5. Heat sufficient oil in a broad non-stick pan, deep fry the prepared chicken pizza base till golden and crisp. Take it off the heat.
  6. Place it on a baking tray, add pizza sauce and spread it evenly. Grate mozzarella cheese on top.
  7. Sprinkle dried red chilli flakes, dried mixed herbs, and place hand-torn basil leaves. Bake till the cheese melts.
  8. Transfer to a serving plate, slice and serve hot.
