Ingredients
- 2 boneless chicken breasts, grilled and shredded
- ¼ cup mayonnaise
- 4 croissants
- ½ medium purple cabbage, shredded
- Crushed black peppercorns to taste
- 8-10 pecan nuts
- Salt to taste
- 1 teaspoon Dijon mustard paste
- Few lollo rosso lettuce leaves
- Potato chips for serving
Method
- Halve the croissants vertically.
- Mix together chicken, cabbage, crushed peppercorns, pecan nuts, salt, mayonnaise and Dijon mustard paste in a bowl.
- To prepare one sandwich, place a lollo rosso lettuce leaf on one halved base of croissants, spread some chicken mixture and cover with the top halved croissant.
- Serve immediately with some potato chips.
