Ingredients
- 200 grams feta cheese
- 200 grams cottage cheese (paneer)
- 10 red grapes, deseeded and halved
- ½ cup watermelon balls
- ½ kiwi
- 4 tablespoons honey
- Salt to taste
- Crushed black peppercorns to taste
- 2-3 lemons
- 3 tablespoons olive oil
- 5 tulsi leaves + for garnish
- ½ watermelon for garnish
- 3-4 grapes deseeded, halved
- 8-10 readymade canapé shells
- 20 small watermelon cubes for garnish
- Fresh mint leaves for garnish
- 8 whole red grapes for garnish
Method
- Cut 150 grams feta cheese into medium sized cubes. Set aside remaining cheese. Transfer in a bowl.
- Cut 150 grams paneer half into cubes. Set aside remaining paneer. Add in the bowl.
- Cut 7 red grapes into halves, deseed and add in bowl. Add watermelon scoop balls. Cut ½ kiwi into squares and add into bowl.
- To make the dressing, add honey, add salt, black pepper, lemon juice, olive oil in another bowl. Mix well.
- Add ladles of dressing over salad and mix well so as to coat over entire salad. Tear into half and add 5 tulsi leaves.
- Cut ¼ part of watermelon into thin long semi-circular slices. - garnish
- Make a border by placing 8 watermelon slices on the edge of a plate and transfer the salad in the centre of the plate. Garnish with 3 tulsi leaves, 3-4 deseeded halved grapes.
- In remaining dressing, add remaining paneer and feta cheese, crumble and mix well. Add cut deseed red grape.
- Take 8-10 canopies, add dressing mixture into canopies. Cut another remaining watermelon slice into triangles and add as plating, and add canopies in plate, garnish each canopy with 2 watermelon cubes and mint leaves and add whole 8 red grapes as a plating.
- Serve immediately.
