Ever wondered why the phrase “say cheese” is used just before a photograph is clicked? Simply because ‘cheese’ makes one smile! Not only the word but cheese as a food makes a lot of palates happy. It is an inexpensive, versatile and nourishing food. We have our very own Indian version as well as the ones made from soy milk that are even healthier. Whichever form, this is one food that is loved by one and all!

Ingredients for Cheese Paneer Fruit Salad Recipe

  • Feta cheese 200 grams

  • Cottage cheese (paneer) 200 grams

  • Red grapes halved and seeded 10

  • Watermelon balls 1/2 cup

  • Kiwi 1/2

  • Honey 4 tablespoons

  • Salt to taste

  • Black peppercorns crushed to taste

  • Lemons 2

  • Olive oil 3 tablespoons

  • Fresh basil leaves 6 + to garnish

  • Watermelon 1/2 to garnish

  • Readymade canape shells 8-10

  • Small watermelon cubes to garnish

  • Fresh mint leaves to garnish

  • Whole red grapes to garnish

Method

Step 1

Cut 150 grams feta cheese into medium sized cubes and transfer into a mixing bowl. Set aside remaining cheese.

Step 2

Cut 150 grams cottage into cubes and add to the feta cheese cubes and mix lightly. Set aside remaining cottage cheese.

Step 3

Add the 7 red grapes and watermelon balls. Cut ½ kiwi into cubes and add into bowl.

Step 4

To make the dressing, take honey in another bowl, add salt, black pepper, juice of 2 lemons and olive oil and mix well.

Step 5

Pour 2 ladles of dressing over salad ingredients in the other bowl and mix gently till all the ingredients are well coated. Tear 2-3 basil leaves and add.

Step 6

Cut ¼ watermelon into thin semi-circular slices. Arrange these slices on the outer edge of a circular serving plate with the curved part facing outwards. Transfer half the salad in the centre of the plate. Garnish with 3 basil leaves and remaining halved and seeded red grapes and serve.

Step 7

Add the remaining cottage cheese and feta cheese cubes to the remaining dressing, crumble them and mix well.

Step 8

Arrange the canapé shells on the worktop, put some of the cheese-dressing mixture in each and keep these on a serving plate.

Step 9

Cut a few triangular slices from the remaining watermelon and arrange them all around the canapés. Garnish each canapé with 1-2 watermelon cubes and mint leaves. Keep one whole red grape between the watermelon triangles. Serve immediately.
