Ingredients
- 1 block Brie cheese
- 8 rusks
- Crushed black peppercorns to taste
- 1 tablespoon olive oil
- 2 teaspoons green garlic, finely chopped
- 1 medium onion, finely chopped
- 8-10 button mushrooms finely chopped
- 2 tablespoons walnuts, chopped
- Salt to taste
- 1 pinch fresh thyme
- 1 tablespoon balsamic vinegar
- Fresh parsley chopped + to garnish
Method
- Preheat oven to 180ºC. Slice cheese thickly.
- Place rusks on a baking tray. Keep a cheese slice on each of them and sprinkle crushed peppercorns.
- Keep the tray in the preheated oven and bake till the cheese melts.
- Heat olive oil in a non-stick pan, add green garlic and onions and sauté till onions turn translucent.
- Add mushrooms, walnuts, salt and thyme, mix and cook for a minute. Add balsamic vinegar, mix well and cook for 4-5 minutes.
- Top the rusks with a spoonful of mushroom mixture, garnish with parsley and serve immediately.
