Cheese Crostini

Crispy rusks topped with melted cheese, savoury mushroom and walnut mixture, and fresh parsley, perfect for a flavorful appetiser. This is a Sanjeev Kapoor exclusive recipe.

Ingredients 

  • 1 block Brie cheese
  • 8 rusks
  • Crushed black peppercorns to taste
  • 1 tablespoon olive oil
  • 2 teaspoons green garlic, finely chopped
  • 1 medium onion, finely chopped
  • 8-10 button mushrooms finely chopped
  • 2 tablespoons walnuts, chopped
  • Salt to taste
  • 1 pinch fresh thyme
  • 1 tablespoon balsamic vinegar
  • Fresh parsley chopped + to garnish

Method

  1. Preheat oven to 180ºC. Slice cheese thickly.
  2. Place rusks on a baking tray. Keep a cheese slice on each of them and sprinkle crushed peppercorns.
  3. Keep the tray in the preheated oven and bake till the cheese melts.
  4. Heat olive oil in a non-stick pan, add green garlic and onions and sauté till onions turn translucent.
  5. Add mushrooms, walnuts, salt and thyme, mix and cook for a minute. Add balsamic vinegar, mix well and cook for 4-5 minutes.
  6. Top the rusks with a spoonful of mushroom mixture, garnish with parsley and serve immediately.
