Cauliflower Pizza

Ingredients
- 2 cups grated cauliflower
- 1½ cups quinoa flour
- Salt to taste
- Crushed black peppercorns to taste
- 4 eggs
- 80 grams parmesan cheese
- 4 tablespoons olive oil
- 8-10 button mushrooms
- 2 chicken sausages
- 400 grams fresh mozzarella cheese
- ½ cup pizza sauce
- 8-10 fresh basil leaves + for garnish
Method
- Take cauliflower in a large bowl, add salt, crushed black peppercorns and quinoa flour. Break the eggs and add and mix well.
- Grate parmesan cheese into the bowl and mix till well combined. Add a little water and mix well.
- To make each pizza, heat 2 tablespoons oil in a shallow non-stick pan, add a portion of the mixture and spread it evenly to form a thick disc. Cook on medium heat till the base is cooked completely.
- Meanwhile, slice button mushrooms, chicken sausages and fresh mozzarella cheese.
- Flip and cook the other side of the pizza base till golden brown and crisp.
- Spread some pizza sauce over the cauliflower base, place some mushroom slices and chicken sausage slices on top, sprinkle salt and crushed black peppercorns over them.
- Arrange some cheese slices on top and place a few fresh basil leaves on top. Drizzle a little pizza sauce on top, cover and cook till the cheese melts. Repeat the process with the remaining ingredients.
- Garnish with fresh basil leaves. Cut into wedges and serve hot.
