Cauliflower Fried Rice

Ingredients 

  • 1/2 medium cauliflower , cut into small florets
  • 2 eggs
  • 1 tablespoon soy sauce
  • 3 tablespoons oil
  • 4-5 garlic cloves , chopped
  • 1 medium onion , chopped
  • 1/2 medium carrot , peeled and grated
  • 2 teaspoons castor sugar
  • 4-5 button mushrooms , chopped
  • 1 medium green capsicum , chopped
  • Sea salt to taste
  • Fried garlic to garnish
  • 1/4 cup chopped spring onion greens 

Method

  1. Transfer the cauliflower into a chopper and chop finely.
  2. Break eggs into a bowl, add ¼ teaspoon soy sauce and whisk it well.
  3. Heat 1½ tbsps oil in a non-stick pan, add garlic and onion, mix and sauté for 2 minutes. Add carrot and 1 tsp castor sugar, mix and saute till the sugar is caramelized.
  4. Add mushrooms and capsicum, mix and sauté for 2 minutes. Add remaining soy sauce, remaining sugar, cauliflower and sea salt and toss well. Cook for 2 minutes.
  5. Shift the cauliflower mixture to one side of the pan, add remaining oil and add beaten eggs.
  6. Once the eggs are cooked, scramble them and mix them with the cauliflower mixture. Add fried garlic and spring onion greens and toss well.
  7. Pack it in the tiffin box.
