Ingredients
- 1/2 medium cauliflower , cut into small florets
- 2 eggs
- 1 tablespoon soy sauce
- 3 tablespoons oil
- 4-5 garlic cloves , chopped
- 1 medium onion , chopped
- 1/2 medium carrot , peeled and grated
- 2 teaspoons castor sugar
- 4-5 button mushrooms , chopped
- 1 medium green capsicum , chopped
- Sea salt to taste
- Fried garlic to garnish
- 1/4 cup chopped spring onion greens
Method
- Transfer the cauliflower into a chopper and chop finely.
- Break eggs into a bowl, add ¼ teaspoon soy sauce and whisk it well.
- Heat 1½ tbsps oil in a non-stick pan, add garlic and onion, mix and sauté for 2 minutes. Add carrot and 1 tsp castor sugar, mix and saute till the sugar is caramelized.
- Add mushrooms and capsicum, mix and sauté for 2 minutes. Add remaining soy sauce, remaining sugar, cauliflower and sea salt and toss well. Cook for 2 minutes.
- Shift the cauliflower mixture to one side of the pan, add remaining oil and add beaten eggs.
- Once the eggs are cooked, scramble them and mix them with the cauliflower mixture. Add fried garlic and spring onion greens and toss well.
- Pack it in the tiffin box.
