Till a few years ago, cauliflower used to be a vegetable that is only available during winter but of late cauliflower is available year around especially in big cities. Referred to as the aristocrat of the cabbage family, the flowers are also eaten raw at times. While buying, look for fresh cauliflowers with compact white heads and green fresh looking leaves. Avoid and reject any loose or spread out heads – they are a sure sign of over maturity.

Ingredients for Cauliflower Fried Rice Recipe

  • Cauliflower ,, cut into small florets 1/2 medium

  • Eggs 2

  • Soy sauce 1 tablespoon

  • Oil 3 tablespoons

  • Garlic , chopped 4-5 cloves

  • Onion , chopped 1 medium

  • Carrot , peeled and grated 1/2 medium

  • Castor sugar 2 teaspoons

  • Button mushrooms , chopped 4-5

  • Green capsicum , chopped 1 medium

  • Sea salt to taste

  • Fried garlic to garnish

  • Spring onion greens , chopped 1/4 cup


Step 1

Transfer the cauliflower into a chopper and chop finely.

Step 2

Break eggs into a bowl, add ¼ teaspoon soy sauce and whisk it well.

Step 3

Heat 1½ tbsps oil in a non-stick pan, add garlic and onion, mix and sauté for 2 minutes. Add carrot and 1 tsp castor sugar, mix and saute till the sugar is caramelized.

Step 4

Add mushrooms and capsicum, mix and sauté for 2 minutes. Add remaining soy sauce, remaining sugar, cauliflower and sea salt and toss well. Cook for 2 minutes.

Step 5

Shift the cauliflower mixture to one side of the pan, add remaining oil and add beaten eggs.

Step 6

Once the eggs are cooked, scramble them and mix them with the cauliflower mixture. Add fried garlic and spring onion greens and toss well.

Step 7

Pack it in the tiffin box.
