Calzone Crisp and delicious pastries filled with paneer bhurji – and Indo Italian snack. This is a Sanjeev Kapoor exclusive recipe. By Sanjeev Kapoor 23 Nov 2016 in Recipes Course New Update Main Ingredients Refined flour (maida), Yeast Cuisine Indo-Italian Course Snacks and Starters Prep Time 51-60 minutes Cook time 11-15 minutes Serve 4 Taste Mild Level of Cooking Easy Others Veg Ingredients list for Calzone + for dusting Refined flour (maida) 1¼ cups 10 grams Yeast to taste Salt 50 grams Butter 1 cup Paneer (cottage cheese) bhurji Milk for sealing and wash Method Add 1-2 tablespoons water to yeast and heat in the microwave for 10 seconds. Remove from heat and mix well. Put flour, salt, yeast and butter in a bowl. Add sufficient water and knead into a soft dough. Set aside for 5-10 minutes. Grease a baking tray with little oil. Divide dough into large portions and roll out into a large disc dusting with flour. Cut roundels from them using a round cutter. Place a roundel on a worktop and put a spoonful of bhurji on it. Apply milk on the edges and bring the edges together to make a crescent shape. Seal the edges by pressing with the help of a fork. Similarly make remaining calzones. Place calzones on greased tray and cover with a muslin cloth. Set aside to prove for 30 minutes. Preheat oven to 180°C. Apply milk wash on calzones and place tray in preheated oven.
