Ingredients list for Calzone
- + for dusting Refined flour (maida) 1¼ cups
- 10 grams Yeast
- to taste Salt
- 50 grams Butter
- 1 cup Paneer (cottage cheese) bhurji
- Milk for sealing and wash
Method
- Add 1-2 tablespoons water to yeast and heat in the microwave for 10 seconds. Remove from heat and mix well.
- Put flour, salt, yeast and butter in a bowl. Add sufficient water and knead into a soft dough. Set aside for 5-10 minutes.
- Grease a baking tray with little oil.
- Divide dough into large portions and roll out into a large disc dusting with flour. Cut roundels from them using a round cutter.
- Place a roundel on a worktop and put a spoonful of bhurji on it. Apply milk on the edges and bring the edges together to make a crescent shape. Seal the edges by pressing with the help of a fork. Similarly make remaining calzones.
- Place calzones on greased tray and cover with a muslin cloth. Set aside to prove for 30 minutes.
- Preheat oven to 180°C.
- Apply milk wash on calzones and place tray in preheated oven. Bake for 15 minutes.
- Remove from heat and serve.
