Ingredients list for Butter Grilled Fish
- 1 Rawas fish fillet halved
- 2 tablespoons Butter
- 3-4 Green garlic stalks
- 2 sprigs Fresh oregano sprigs
- 2 sprigs Fresh thyme sprigs
- 2 sprigs Fresh rosemary sprigs
- 1 Lemon
- 6-7 Asparagus
- to taste Salt
- 1 tablespoon Olive oil
- 1 teaspoon Oil
Method
- Remove hairy ends of green garlic stalks and chop the bulbs with a part of the stalks finely. Remove leaves of oregano, thyme and rosemary and chop them finely. Halve the lemon. Halve the asparagus.
- Take each half of the fish fillet on a plate. Squeeze the juice of ½ lemon, sprinkle salt, 1 tsp chopped green garlic and rub well on both sides. Drizzle olive oil and rub well on both sides.
- Heat oil and 1 tbsp butter in a non-stick grill pan, add fish fillets and fry on medium heat, turning sides, till golden and grill marks appear on both sides. Keep basting occasionally. Transfer them onto a plate.
- Add some of the mixed herbs, some of the remaining green garlic and asparagus and saute on medium heat for 2-3 minutes. Remove them onto another plate.
- Add remaining butter in the same pan, and when it melts add remaining green garlic, remaining mixed herbs. Squeeze juice of remaining ½ lemon and sauté for a minute on medium heat.
- Arrange sautéed asparagus on 2 serving plates, place a fish fillet over them in each plate and drizzle the sautéed herb mixture on top. Serve hot.
