Ingredients list for Breakfast Burritos

  • 4 Whole wheat tortilla
  • 8-10 Spicy chicken sausages
  • 1 medium Onion
  • 2 tablespoons Oil
  • 2 tablespoons Butter chilled
  • 2 Eggs beaten
  • 16 florets Broccoli blanched
  • 2 tablespoons Cream
  • to taste Salt
  • 1 teaspoon Black pepper powder
  • 1/2 cup Grated cheese
  • 8-12 slices Jalapeno
  • a few Iceberg lettuce leaves

Method

  1. Heat oil in a non stick pan.
  2. Slice onion. Thinly slice sausages. Put onion and sausages in the pan and sauté.
  3. Take the pan off the heat. Add chilled butter and mix. Add eggs and cook, stirring, to scramble. Do not overcook.
  4. Add cream, salt and pepper powder and mix. Add cheese and mix.
    Keep a tortilla on the work top and put a portion of filling in the centre. Place 4 broccoli florets in a line followed by jalapeno slices and lettuce. Roll tightly.
  5. Make other burritos similarly and serve immediately.
