Ingredients
- 500 grams boneless mutton, cut into small pieces
- 1 medium beetroot, peeled and grated
- 1 tbsp oil
- 1 large onion, finely chopped
- 4-5 garlic cloves
- ½ cup tomato puree
- Salt to taste
- Crushed black peppercorns to taste
- 1 medium potato, peeled and cut into cubes
- ½ cup grated carrot
- 2 tbsps shredded cabbage
- 1 tbsp lemon juice
- Fresh sprig of parsley for garnish
Method
- Heat oil in a deep non-stick pan. Add onion and sauté till translucent. Add garlic and mix well.
- Add mutton pieces and mix well. Sauté for 1-2 minutes. Add tomato puree, mix well.
- Add salt, crushed black peppercorns and mix well. Add sufficient water, mix and bring to a boil
- Add potato, carrot, beetroot, cabbage and lemon juice, mix well, cover and cook till mutton and vegetables are fully done.
- Garnish with fresh sprig of parsley and serve hot.
