Ingredients list for Blueberry Buttermilk Pancake
- 1/2 cup + 1 tablespoon Blueberry compote
- 1 cup Buttermilk
- 1 cup Refined flour (maida)
- 1/2 teaspoon Soda bicarbonate
- 1 teaspoon Baking powder
- a pinch Salt
- to cook Oil
- as required Whipped cream
Method
- Place refined four in a deep bowl. Add baking soda, baking powder, a pinch of salt and mix well. Add blueberry compote and mix well. Add buttermilk and mix to make a lump free batter. Add a little water if the batter is too thick. Set aside for a while.
- Heat a little oil in a shallow non stick pan, pour a ladle full of batter into it and let it spread evenly. Cover and cook on medium heat till set and the underside cooked.
- Turn over gently and let the other side cook too. Gently fold into half and slide onto a serving plate. Top it with whipped cream and little blueberry compote and serve immediately.
