Ingredients list for Blue Velvet Cake
- + for dusting Refined flour (maida) 2 cups
- 2 Eggs
- 2 tablespoons Edible blue colour
- for greasing Butter 1 cup +
- 1? cups Castor sugar (caster sugar)
- 1 teaspoon Baking powder
- ½ cup Buttermilk
- as required Cream cheese
- to sprinkle Colourful edible sprinklers
Method
- Preheat oven to 180° C. Grease a rectangle baking tin with some butter and dust with some flour.
- Cream together butter and castor sugar with an electric beater in a bowl. Add eggs, one by one, and cream till well combined.
- Sift together flour and baking powder into the mixture and fold in well.
- Add blue colour and mix well. Add buttermilk and mix till well combined.
- Pour the batter into the prepared tin till ¾ full. Place the tin in the preheated oven and bake for 35-40 minutes. Remove from heat, cool and demould.
- Discard the crust of the cake and cut into squares. Arrange the squares on a serving plate. Pipe out cream cheese on each and sprinkle colourful sprinklers. Serve immediately.
