Ingredients list for Berry Custard

  • 1/4 cup Berry compote
  • 4 Eggs
  • 500 millilitres Milk
  • Few drops Vanilla essence
  • 90 gms + 1 cup Sugar


  1. Preheat the oven at 180° C.
  2. Heat milk in a non-stick pan till it just comes to a boil.
  3. Break eggs in a bowl. Add vanilla essence, 90 grams sugar and whisk well. Add milk little at a time and whisk further for 3-5 minutes.
  4. Heat the remaining sugar in a non-stick pan. Add 2 tbsps water and cook till the sugar caramelizes.Strain the mixture. Add berry compote. Mix well and keep aside.
  5. Pour the caramel into individual silicon moulds. Top it with the egg mixture.
  6. Pour water in a baking tray. Place the moulds in the tray and bake in the preheated oven for 30-35 minutes.
  7. Take the moulds out of the oven and cool down to room temperature, remove custard from the moulds and serve.
