Ingredients list for Berry Custard
- 1/4 cup Berry compote
- 4 Eggs
- 500 millilitres Milk
- Few drops Vanilla essence
- 90 gms + 1 cup Sugar
Method
- Preheat the oven at 180° C.
- Heat milk in a non-stick pan till it just comes to a boil.
- Break eggs in a bowl. Add vanilla essence, 90 grams sugar and whisk well. Add milk little at a time and whisk further for 3-5 minutes.
- Heat the remaining sugar in a non-stick pan. Add 2 tbsps water and cook till the sugar caramelizes.Strain the mixture. Add berry compote. Mix well and keep aside.
- Pour the caramel into individual silicon moulds. Top it with the egg mixture.
- Pour water in a baking tray. Place the moulds in the tray and bake in the preheated oven for 30-35 minutes.
- Take the moulds out of the oven and cool down to room temperature, remove custard from the moulds and serve.
