Beetroot Salad With Orange Dressing

Ingredients 

  • 600 grams beetroots
  • 1/4 cup orange Juice
  • 1 tablespoon salad oil
  • Salt to taste
  • 1/4 teaspoon white pepper powder
  • 1/4 teaspoon mustard powder
  • 1/2 teaspoon grated orange rind
  • 1/4 cup spring onion rings

Method

  1. Boil the beetroots. When cool, peel and cut them into half-inch cubes. Chill them. Mix orange juice, oil, salt, pepper powder, mustard powder and orange rind in a bowl and whisk till the mixture is homogeneous. Pour the dressing over the beetroot pieces and garnish with spring onion rings.
