Ingredients list for Batata Bhaji
- 6-7 medium Potatoes, parboiled and cubed
- 3 tablespoons Curry Leaves
- 3 tablespoons Oil
- 1/2 teaspoon Mustard seeds
- 10 Curry leaves
- 2 tablespoons Split black gram skinless (dhuli urad dal)
- 2 Dried red chillies,broken
- 1 medium Onion, sliced
- 1/4 teaspoon Turmeric powder
- to taste Salt
- 1/2 cup Scraped coconut
- a few Fresh coriander leaves,finely chopped
Method
- Heat the oil in a non stick pan, add the mustard seeds and let them splutter.
- Add the curry leaves and urad dal and sauté till the dal turns light brown. Add the red chillies, stir and add the onion and sauté till translucent.
- Add the turmeric powder. Stir well, add the potato cubes and salt. Stir well and cook covered for five minutes on low heat till the potatoes are done.
- Add the coconut and stir with a light hand. Remove from heat.
- Garnish with coriander leaves and serve hot.
