Ingredients 

  • ¾ cup banana puree
  • 2 tablespoons instant coffee powder
  • 1½ cups + 1 tablespoon refined flour (maida) + for dusting
  • ½ teaspoon baking powder
  • 1½ cups butter
  • 1½ cups castor sugar (caster sugar)
  • 3 eggs
  • A few drops of vanilla essence

Method

  1. Preheat oven to 180° C.
  2. Sift refined flour and baking powder together into a bowl and set aside.
  3. Cream butter and sugar together in a large mixing bowl till light and fluffy. Add eggs, one by one, beating well till the mixture becomes light. Add vanilla essence and mix well.
  4. Fold in refined flour, adding it in batches. Add milk and mix well.
  5. Add 2 tablespoons of water to the coffee powder and microwave for 10 seconds, and cool it slightly.
  6. Add coffee decoction and banana puree to the flour mixture and mix well. Pour the batter into a piping bag and pipe the batter into silicone muffin moulds.
  7. Place the moulds in the preheated oven and bake for 25-30 minutes. Remove from oven and cool on a wire rack.
  8. Serve.
