Ingredients list for Banana and Coffee Muffins
- ¾ cup Bananas puree
- 2 tablespoons Instant coffee powder
- for dusting Refined flour (maida) 1½ cups + 1 tablespoon
- ½ teaspoon Baking powder
- 1½ cups Butter
- 1½ cups Castor sugar (caster sugar)
- 3 Eggs
- a few drops Vanilla essence
Method
- Preheat oven to 180° C.
- Sift refined flour and baking powder together into a bowl and set aside.
- Cream butter and sugar together in a large mixing bowl till light and fluffy. Add eggs, one by one, beating well till the mixture becomes light. Add vanilla essence and mix well.
- Fold in refined flour, adding it in batches. Add milk and mix well.
- Add 2 tablespoons water to coffee powder and microwave for 10 seconds and cool it slightly.
- Add coffee decoction and banana puree to the flour mixture and mix well. Pour the batter into a piping bag and pipe the batter into silicon muffin moulds.
- Place the moulds in the preheated oven and bake for 25-30 minutes. Remove from oven and cool on a wire rack.
- Serve.
