Ingredients list for Baked Papaya With Spiced Walnut Filling
- 2 small Papaya peeled halved and deseeded
- 1 teaspoon Walnuts grated
- 1 1/2 teaspoons Lemon juice
- 2 tablespoons Oil sunflower
- 2 teaspoons Ginger,ground
- 2 teaspoons Cinnamon powder
- 1/4 teaspoon Nutmeg,grated
- 3 tablespoons Brown sugar
- 1/2 cup Walnuts,chopped finely
- 1 cup Brown bread crumbs
- 1/2 cup Yogurt
Method
- Preheat oven at 190°C. Roll up four pieces of aluminium foil into thin sausage shapes and use them to hold the halved papaya in an ovenproof dish.
- Mix lemon rind, lemon juice with sunflower oil, ginger, cinnamon, nutmeg and brown sugar. Stir in walnuts and breadcrumbs; mix until the crumbs are evenly moistened.
- Spoon the mixture into the halved papaya forming a heap. Bake for about twenty minutes, until the filling is browned. Serve hot with yogurt.
