Ingredients list for Baked Coconut-Cook Smart
- 1 1/2 cups for garnish Scraped fresh coconut
- 1/3 cup Coconut cream
- 100 grams Butter
- 1/2 cup Sugar
- 3 Eggs
- 1/3 cup Condensed milk
- 1 teaspoon Lemon zest
- 3 tablespoons Refined flour (maida) 3
Method
- Preheat oven at 180ºC.
- Take butter in a bowl, add sugarand cream together till smooth and light.
- Break eggs into the bowl and mix well. Add scraped coconut and mix well. Add condensed milk and mix well. Add coconut cream and mix again.
- Finely chop lemon zest and add. Mix well.
- Sift refined flour into the bowl and mix well.
- Pour batter into an ovenproof baking dish, put the dish in the preheated oven and bake for 25 minutes.
- Serve hot garnished with scraped coconut or with an ice cream of your choice.
