Ingredients list for Baingan Walnut Rolls
- 4 Brinjal
- 1/2 teaspoon Walnut
- 1 1/2 teaspoons Red chilli powder
- to taste Salt
- 3 tablespoons Oil
- 8 cloves Garlic
- 1/4 cup Walnuts
- 3 tablespoons Fresh dill (suva) chopped
- Juice of 1 lemon
Method
- Slice brinjals into thin vertical slices and keep them in a bowl.
- Mix turmeric powder, red chilli powder, salt and 2 tbsps oil and coat the brinjal slices with this mixture.
- To make the stuffing, grind together garlic, walnuts and 1 tbsp suva.
- Place the marinated brinjals on the griller, pour a little oil and cook, flipping sides, till golden.
- Heat the remaining oil in a non stick pan. Add the ground masala and a little water and mix well.
- Add the remaining suva, lemon juice, salt and mix well.Spread the stuffing on the brinjal slices and roll them.
- Arrange the rolls on a serving plate, garnish with some suva and serve.
