Ingredients list for Bacon and Cheese Stuffed Crisp Potato skin
- 8-10 Bacon slices sliced
- 1/4 cup Grated cheddar cheese
- 4 medium Potatoes boiled
- Oil 1 tablespoon + for deep-frying
- 10-12 Garlic cloves finely chopped
- 3-4 Spring onion bulbs chopped
- to taste Salt
- 1/2 teaspoon Crushed black peppercorns
- 3 tablespoons Spring onion greens chopped
Method
- Preheat oven to 180º C.
- Halve the potatoes with skin, scoop out the flesh and mash. Reserve the shells.
- Heat one tablespoon oil in a non-stick pan, add garlic and sauté. Add spring onion bulbs and sauté well. Add bacon and sauté till it turns crisp.
- Add salt and crushed peppercorns mix well. Add mashed potatoes and cook on low heat for two to three minutes. Add spring onion greens and mix well.
- Place the reserved potato shells on a baking tray and blind bake them till crisp.
- Fill the potato shells with the bacon mixture generously and place them in an ovenproof dish. Top with cheese, put the dish in the preheated oven and bake for ten minutes.
- Serve hot.
