Bacon Wrapped Prunes

Sweet prunes are stuffed with herbed feta and wrapped in smoky bacon, then baked until crisp. A bite-sized appetiser bursting with sweet, salty, and creamy flavours. This is a Sanjeev Kapoor exclusive recipe.

Ingredients 

  • 8-12 bacon strips
  • 8-12 prunes, pitted
  • ½ cup Feta cheese
  • Crushed black peppercorns to taste
  • 1 teaspoon red chilli flakes
  • 1 teaspoon mixed herbs
  • 1 teaspoon garlic chopped

Method

  1. Preheat oven to 180° C.
  2. Take feta cheese, crushed peppercorns, chilli flakes, mixed herbs and garlic in a bowl and mix well.
  3. Make a cavity in each prune with the back of a brush.
  4. Fill a piping bag with feta cheese mixture and pipe into prunes.
  5. Wrap each stuffed prune with a bacon strip, place them on a plate and secure with toothpicks. Arrange them on a baking tray.
  6. Place the baking tray in the preheated oven and bake for 8-10 minutes.
  7. Serve hot.
