Ingredients list for Assorted Mithai Malpua

  • 100 grams Assortted mithai
  • 2 1/2 cups Milk
  • 1/2 cup Mawa / Khoya
  • 1/4 cup semolina (suji / rawa)
  • 1 cup Sugar
  • a few Saffron strands
  • 1/2 cup Refined flour (maida)
  • Ghee for frying
  • for garnishing Blanched pistachio slivers

Method

  1. Boil milk in a non-stick pan, reduce heat and cook till milk reduces to half. Add the mawa / khoya and mix well.
  2. Remove from heat and cool down to room temperature. Add semolina, mix well and set aside for fifteen to twenty minutes.
  3. Cook sugar with one cup of water in a non-stick pan, stirring till sugar dissolves and the syrup reaches two string consistency. Add saffron and mix well.
  4. Add flour to the milk mixture and mix well. Break the assorted mithais into small pieces and add and mix well.
  5. Heat ghee in a non-stick pan, pour the mixture with a ladle and spread into small discs and cook, turning sides, till golden on both sides.
  6. Remove the malpuas and put them directly into the sugar syrup and let them soak the syrup.
  7. Serve hot garnished with pistachios.
