Ingredients list for Assorted Mithai Malpua
- 100 grams Assortted mithai
- 2 1/2 cups Milk
- 1/2 cup Mawa / Khoya
- 1/4 cup semolina (suji / rawa)
- 1 cup Sugar
- a few Saffron strands
- 1/2 cup Refined flour (maida)
- Ghee for frying
- for garnishing Blanched pistachio slivers
Method
- Boil milk in a non-stick pan, reduce heat and cook till milk reduces to half. Add the mawa / khoya and mix well.
- Remove from heat and cool down to room temperature. Add semolina, mix well and set aside for fifteen to twenty minutes.
- Cook sugar with one cup of water in a non-stick pan, stirring till sugar dissolves and the syrup reaches two string consistency. Add saffron and mix well.
- Add flour to the milk mixture and mix well. Break the assorted mithais into small pieces and add and mix well.
- Heat ghee in a non-stick pan, pour the mixture with a ladle and spread into small discs and cook, turning sides, till golden on both sides.
- Remove the malpuas and put them directly into the sugar syrup and let them soak the syrup.
- Serve hot garnished with pistachios.
