Ingredients
- 4-5 medium potatoes, boiled and peeled
- Melted butter for brushing
- 1 medium onion, chopped
- 1 medium tomato, chopped
- 4 tablespoons green chutney
- 4 tablespoons date and tamarind chutney
- 2 tablespoons red chilli garlic chutney
- Black salt for sprinkling
- Roasted cumin powder for sprinkling
- Chaat masala for sprinkling
- 4 lemon wedges
- Sev for garnish
- Chopped fresh coriander leaves for garnish
- Fresh pomegranate pearls for garnish
Method
- Halve the potatoes and scoop out the centre to make a cavity.
- Heat an electric barbeque and place the halved potatoes on the barbeque grill. Brush melted butter on top and cook till grill marks appear on all sides.
- Transfer to serving plates and stuff each with the scoped-out potato, sprinkle onion and tomato.
- Drizzle green chutney, date and tamarind chutney, red chilli-garlic chutney and sprinkle black salt, roasted cumin powder and chaat masala.
- Squeeze lemon on top, garnish with sev, coriander leaves and pomegranate pearls. Serve immediately.
