Ingredients 

  • 4-5 medium potatoes, boiled and peeled
  • Melted butter for brushing
  • 1 medium onion, chopped
  • 1 medium tomato, chopped
  • 4 tablespoons green chutney
  • 4 tablespoons date and tamarind chutney
  • 2 tablespoons red chilli garlic chutney
  • Black salt for sprinkling
  • Roasted cumin powder for sprinkling
  • Chaat masala for sprinkling
  • 4 lemon wedges
  • Sev for garnish
  • Chopped fresh coriander leaves for garnish
  • Fresh pomegranate pearls for garnish

Method

  1. Halve the potatoes and scoop out the centre to make a cavity.
  2. Heat an electric barbeque and place the halved potatoes on the barbeque grill. Brush melted butter on top and cook till grill marks appear on all sides.
  3. Transfer to serving plates and stuff each with the scoped-out potato, sprinkle onion and tomato.
  4. Drizzle green chutney, date and tamarind chutney, red chilli-garlic chutney and sprinkle black salt, roasted cumin powder and chaat masala.
  5. Squeeze lemon on top, garnish with sev, coriander leaves and pomegranate pearls. Serve immediately.
