Ingredients list for Almond Rice Jelly
- 1/2 cup Almond powder
- Rice flour ¼ cup + 1 tablespoon
- for greasing Oil
- 1 1/2 tablespoons Gelatin
- 3/4 cup Castor sugar (caster sugar)
- 2 tablespoons Desiccated coconut
- a few drops Almond essence
Method
- Grease jelly moulds with oil.
- Put rice flour in a non-stick pan, add almond powder, gelatin, castor sugar and desiccated coconut and mix well.
- Add two and a quarter cups boiling water and bring the mixture to a boil. Cook further till it thickens.
- Add almond essence, mix well and pour into greased jelly moulds. Keep the moulds in the refrigerator for thirty minutes to set.
- Remove the jelly from the moulds and serve.
