Tiffin special

Menu: Some people can really get those tiffin blues when they just don’t understand what to pack in a tiffin which is tasty as well as different from the routine foods. Well, it’s not that difficult to cook up exciting dishes that go very well in tiffins as well. You can enjoy eating up your dabba with these – Paneer Corn Sabzi, Assorted Vegetable Rice and Bhindi Amchur.

Shopping list

200 grams cottage cheese (paneer)

250 grams American sweet corn kernels 

50 grams French beans

2 medium carrots

1 packet mushroom

1 packet babycorns

1 long brinjal

1 bottle soy sauce

1 bottle five spice powder

1 bunch spring onions

200 grams lady fingers

1 packet amchur powder

For faster preparation

Cut the cottage cheese into ½ inch cubes. Boil sweet corn. Finely chop onions, green chillies and fresh coriander leaves. Finely chop garlic, carrots, baby corns, spring onions and French beans. Dice mushrooms and cube brinjals and deep-fry them. Mix together all the masalas and keep them ready for bhindi amchur. Trim lady fingers at both ends, make a slit on one side without cutting through. Stuff the masala mixture into the slits of ladyfingers.

How to go about

Heat oil, add cumin seeds and when they start spluttering add onions, green chillies, turmeric powder and sugar and sauté. Add paneer and sweet corn and sauté well. Serve hot garnish with chopped coriander. Sauté the garlic till fragrant. Add vegetables and cook till tender. Add five spice powder, salt and rice and toss well. Serve hot garnished with chopped spring onions. Heat oil in a non- stick pan, add stuffed bhindis into pan and add remaining masala to pan and cook till bhindi are done. Serve hot.
