Ingredients list for Vegan Kulfi - SK Khazana

  • 1/4 cup Cashewnuts
  • 8-10 Seedless dates
  • 2 tablespoons Steel cut oats
  • 2-3 Green cardamoms seeds separated
  • 1 cup Thick coconut milk

Method

  1. Take cashew nuts in a small bowl. Add sufficient water and let them soak for 3-4 hours and then drain.
  2. Soak dates in sufficient water in another bowl for 30 minutes and then drain.
  3. Put oats and green cardamom seeds in a blender jar and blend to a fine powder.
  4. Transfer the soaked cashew nuts in another blender jar, add soaked dates and blend well.
  5. Add the oats-green cardamom powder and coconut milk and blend till smooth and thick.
  6. Pour the mixture into kulfi moulds, screw on the lids and and keep in the refrigerator for 1 hour. Further keep them in the freezer to set for 7-8 hours or till set.
  7. De-mould and serve immediately.
