Ingredients for Vanilla Cupcakes with Nutella Frosting Recipe

  • Refined Flour 1 1/2 teaspoons

  • Buttermilk 1 1/4 cup

  • Butter softened 1/4 cup

  • Castor sugar 3/4 cup

  • Eggs 2

  • Cornflour 2 tablespoons

  • A pinch baking powder

  • A pinch salt

  • Buttermilk 1/2 cup

  • Oil for greasing

  • Icing sugar for dusting

  • Chocolate chips for decoration

  • Frosting

  • Nutella 1/2 cup

  • Icing sugar 2/3 cup

  • Double cream 1-2 tablespoons

Method

Step 1

Preheat oven at 180°C.

Step 2

Combine butter, sugar and vanilla essence in a bowl and beat well till smooth and creamy. Divide the mixture into two parts and reserve one for frosting.

Step 3

Add eggs to the remaining part and beat well.

Step 4

Add refined flour, cornflour, baking powder and salt and beat again.

Step 5

Add buttermilk, little by little and beat well till light and frothy.

Step 6

Grease individual cupcake moulds with oil and pour batter in them filling ¾. Place them on a baking tray and put the tray in the preheated oven and bake for 15-18 minutes.

Step 7

To make frosting, take the reserved butter-sugar mixture in a bowl. Add icing sugar and mix well.

Step 8

Add cream and mix well. Add Nutella and mix well. Beat well with an electric beater.

Step 9

Remove cupcakes from the oven and demould. Cool to room temperature.

Step 10

Pour the frosting into a piping bag fitted with a star nozzle.

Step 11

Pipe out portions on the cupcakes and place them on a serving platter. Dust icing sugar on top and sprinkle some chocolate chips.

Step 12

Serve immediately.
