Tortilla Pizza

This pizza has a tortilla for base but is equally tasty. This is a Sanjeev Kapoor exclusive recipe.

Ingredients list for Tortilla Pizza

  • 4 Tortillas
  • 12-16 Mushrooms sliced
  • Olive oil 1 teaspoon + for drizzling
  • 1 large Yellow capsicum cut into strips
  • 1 large Red capsicum cut into strips
  • 1 large Green capsicum cut into strips
  • 1/2 cup American corn kernels boiled
  • to taste Salt
  • to taste Crushed black peppercorns
  • 4 tablespoons Pizza sauce
  • 10-12 Black olives pitted and sliced
  • 10-12 Green olives pitted and sliced
  • 8 tablespoons Grated mozzarella cheese
  • 4 tablespoons Grated cheddar cheese
  • 8 + for garnishing Basil leaves

Method

  1. Preheat oven at 200° C.
  2. Heat one teaspoon olive oil in a non-stick pan. Add mushrooms and sauté on high heat till the moisture evaporates.
  3. Add all the capsicums and toss well and sauté for two minutes.
  4. Add corn kernels and toss. Add salt and crushed peppercorns, toss and sauté for a minute. Switch off heat.
  5. Place tortillas on a worktop. Spread one tablespoon pizza sauce on each. Spread cooked mixture on each and top with black and green olives, two tablespoons grated mozzarella cheese and one tablespoon grated cheddar cheese. Tear two basil leaves and sprinkle over each pizza.
  6. Place the pizzas on a baking tray, drizzle olive oil on each, put the tray in preheated oven and bake for ten minutes or till the cheese melts.
  7. Cut into wedges, garnish with basil leaves and serve hot.
