Ingredients list for Tomato Panchamrit
- 250 grams Ripe Red Tomatoes 1/2 inch pieces
- 2 teaspoons Oil
- 1/4 teaspoon Mustard seeds
- 2-3 Green chillies slit
- a pinch Asafoetida
- 1/4 teaspoon Turmeric powder
- to taste Salt
- 2 teaspoons Jaggery (gur) grated
- 1/4 cup Roasted peanuts crushed
- 2 tablespoons Fresh coriander leaves chopped
Method
- Heat oil in a kadai and add mustard seeds. When they crackle, add green chillies. Sauté for half a minute and add asafoetida and turmeric powder.
- Add tomato pieces, salt and jaggery and stir to mix well. Cover, reduce heat and cook till the tomatoes become soft.
- Add crushed roasted groundnuts and mix well. Garnish with coriander leaves and serve hot.
