Be a kid or a teenage or an adult or an oldie, chicken lovers trend all over the world at all times! One meat that is a favourite of all beyond belief! When cooked, it can be presented in many guises. Sauté it, fry it, toss it, bake it, steam it – eat it the way you want to. Whatever its form may be upon being cooked, its flavour may change but its flesh remains high in protein, low in fat and can be digested easily.

Ingredients for Thai Chicken Noodle Soup Recipe

  • Boneless chicken cut into thin strips 150 grams

  • Noodles boiled 50 grams

  • Chicken stock 2 cups

  • Lemon grass stalk 1

  • Fresh red chilli 1

  • Ginger cut into thin strips 1 inch

  • Tamarind paste 1 teaspoon

  • Coriander roots chopped 1 tablespoon

  • Fish sauce 1½ tablespoons

  • Sugar 2 teaspoons

  • Coconut milk 1¼ cups

  • Turmeric powder 1 teaspoon

  • Salt to taste

  • Lemon juice 3 teaspoons

  • Fresh coriander leaves chopped 2 tablespoons

  • Pak choy leaves 5-6


Step 1

Boil chicken stock in a non-stick wok.

Step 2

Pound the base of lemongrass stalk to loosen it and tie it into a rough knot and put in the wok, stir well.

Step 3

Slit, remove seeds and slice red chilli thinly.

Step 4

Add ginger, tamarind paste, coriander roots, fish sauce, red chilli and sugar to the pan. Stir well and let it boil.

Step 5

Add chicken, mix well and simmer till the chicken is done.

Step 6

Add noodles and stir well. Add salt, lemon juice and 1 tablespoon coriander leaves and stir well.

Step 7

Add torn pak choy leaves and mix well. Bring it to a boil.

Step 8

Serve piping hot garnished with remaining coriander leaves.
