Ingredients
- 14-16 button mushrooms
- 1 tablespoon crushed garlic
- 1 tablespoon grated ginger
- 2-3 green chillies
- 18-20 shrimps
- 2 spring onion bulbs
- Salt to taste
- 2 tablespoons olive oil
- Crushed black peppercorns to taste
- Juice of 1 lemon
Method
- Discard stalks of mushrooms to make them hollow.
- Put garlic and ginger in a mixer jar. Roughly chop green chillies and add. Add shrimps. Quarter spring onion bulbs, add and grind. Add salt and grind to a smooth paste. Transfer the paste into a bowl.
- Dampen your palms with water and stuff the ground paste into the hollowed mushrooms.
- Put olive oil in a bowl, add salt, crushed peppercorns and lemon juice and mix well. Roll the mushrooms in this mixture, place them in an air fryer basket and cook at 180º C for 10 minutes.
- Arrange the stuffed mushrooms on a serving plate and serve hot.
