Available in various types, shapes and sizes, these edible fungi (purely vegetarian!) are a great way to glam-up your dishes. Talking about the types, there are – button, enoki, morel, oyster, shiitake, porcini, chanterelle and portabella. Buy the ones with a firm texture and even colour with tightly-closed caps. If the gills are showing, it is an indication of age and they are probably past their prime.

Cook time : 16-20 minutes

Ingredients for Stuffed Mushrooms Recipe

  • Button mushrooms , stems removed 12 large

  • Onions 2 medium

  • Garlic cloves 8-10

  • Pickled jalapenos 7-8

  • Fresh parsley sprigs 3-4 + to garnish

  • Processed cheese 100 garnish

  • Salt to taste

  • Dried breadcrumbs as required

  • Olive oil as required


Step 1

Preheat oven to 200° C.

Step 2

Chop onions, garlic, jalapenos and parsley in a chopper and transfer into a bowl.

Step 3

Grate cheese into the bowl. Add salt and mix well. Stuff this mixture generously into the mushroom hollows.

Step 4

Arrange the mushrooms in a non-stick baking tin resting them against the edge of the tin. Sprinkle little dried breadcrumbs and drizzle a little olive oil on each mushroom, keep the tin in the preheated oven and bake for 15-20 minutes.

Step 5

Take the tin out of the oven, arrange the mushrooms on a serving platter, garnish each mushroom with a little parsley and serve hot with a chutney or sauce of your choice.
