Ingredients for Stuffed Eggplant Rings-SK Khazana Recipe

  • Large eggplant

  • Medium potatoes boiled, peeled and grated 2

  • Processed cheese grated 1/2 cup

  • Cheddar cheese grated 1/2 cup

  • Red chilli flakes 1 teaspoon

  • Salt to taste

  • Oil for greasi

  • Panko crumbs to sprinkle


Step 1

Preheat oven to 180º C.

Step 2

Place a small cookie cutter in the centre of each slice and cut out a circular slice to get a doughnut shaped slice.

Step 3

Put the cut out slices in a bowl and mash well.Add potatoes, processed cheese, cheddar cheese, chilli flakes and salt and mix well.

Step 4

Grease a baking tray with some oil and place the hollowed eggplant slices on it.

Step 5

Stuff the centre portions of each slice with potato mixture, brush some oil and sprinkle some panko crumbs on top.

Step 6

Put tray in preheated oven and bake for 15-20 minutes or till the crust turns golden brown.

Step 7

Serve hot.
