Place a small cookie cutter in the centre of each slice and cut out a circular slice to get a doughnut shaped slice. Put the cut out slices in a bowl and mash well.Add potatoes, processed cheese, cheddar cheese, chilli flakes and salt and mix well. Grease a baking tray with some oil and place the hollowed eggplant slices on it. Stuff the centre portions of each slice with potato mixture, brush some oil and sprinkle some panko crumbs on top.
