Ingredients for Strawberries In Sauce Anglaise Recipe

  • Fresh strawberries 20-24

  • Cream 500 millilitres

  • Vanilla pod 1

  • Egg yolks 4

  • Sugar 150 grams

  • Cornflour/ corn starch 2 teaspoons

  • Black peppercorns crushed 3-4

Method

Step 1

Hull and quarter the strawberries. Arrange them in a serving bowl.

Step 2

Heat cream in a pan. Slit the vanilla stick or pod, remove the grains and add to the cream.

Step 3

Cook on low heat, stirring occasionally for about five minutes.

Step 4

Strain into another pan and cool slightly. Take egg yolks in a bowl, add sugar and corn flour and whisk together thoroughly till well blended.

Step 5

Add to the cream and cook on low heat, stirring continuously, till the sauce thickens and coats the back of a spoon.

Step 6

Pour the sauce over the strawberries. Sprinkle freshly crushed black peppercorns and serve hot.
