How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for Spinach, Mushroom And Pistachio Pilaf Recipe

  • Basmati Rice 1 1/2 cups

  • Spinach shredded 1 bunch

  • Button mushrooms thickly sliced 10-12

  • Pistachios slivered 3 tablespoon

  • Butter 2 teaspoons

  • Bay leaf 1

  • Black peppercorns 5

  • Onion sliced 1 medium

  • Garlic finely chopped 5-6 cloves

  • Vegetable stock 3 cups

  • Salt to taste

  • Lemon juice 1 tablespoon

Method

Step 1

Soak rice in four cups of water for half an hour. Drain and set aside. Heat butter in a non stick pan, add bay leaf and peppercorns.

Step 2

Stir-fry briefly. Add onion and sauté till translucent. Add garlic and sauté for a minute. Add mushrooms and continue cooking for half a minute.

Step 3

Add rice, stir gently for about a minute. Add vegetable stock and salt to taste. Bring to a boil, add spinach and mix.

Step 4

Cover and cook on low heat till rice is done. Add lemon juice and mix. Garnish with pistachio slivers and serve hot.
