Spinach, Mushroom And Pistachio Pilaf

Ingredients list for Spinach, Mushroom And Pistachio Pilaf

  • 1 1/2 cups Basmati Rice
  • 1 bunch Spinach shredded
  • 10-12 Button mushrooms thickly sliced

Method

  1. Soak rice in four cups of water for half an hour. Drain and set aside. Heat butter in a non stick pan, add bay leaf and peppercorns.
  2. Stir-fry briefly. Add onion and sauté till translucent. Add garlic and sauté for a minute. Add mushrooms and continue cooking for half a minute.
  3. Add rice, stir gently for about a minute. Add vegetable stock and salt to taste. Bring to a boil, add spinach and mix.
  4. Cover and cook on low heat till rice is done. Add lemon juice and mix. Garnish with pistachio slivers and serve hot.
