Sesame Tossed Greens In Hot Bean Sauce

Broccoli, snow peas, French beans and pak choy tossed in hot bean sauce with dominant flavour of garlic and galangal. This is a Sanjeev Kapoor exclusive recipe.

Ingredients 

  • 2 teaspoons sesame seeds (til) ,roasted
  • 1 medium broccoli, separated into florets
  • 1/3 cup snow peas
  • 10-12 French beans, diagonally sliced
  • 4 spring onions diagonally sliced
  • 1 bunch pak choy, roughly chopped
  • 2 tablespoons hot black bean sauce
  • 2 teaspoons sesame oil (til oil)
  • 10 garlic cloves, chopped
  • 1 1/2 inch galangal pieces, chopped
  • Salt to taste
  • 15-20 black peppercorns, crushed
  • 2 teaspoons soy sauce

Method

  1. Blanch broccoli, snow peas and French beans in boiling water and refresh in cold water. Heat oil in a wok till it smokes.
  2. Add garlic and galangal and toss Add broccoli, snow peas, French beans, spring onions, pok choy, hot bean sauce and toss on high heat.
  3. Adjust salt and add crushed peppercorns and soy sauce. Toss and serve immediately.
