History of Indian cuisine dates back to nearly 5,000-years ago when various groups and cultures interacted with India that led to a diversity of flavours and regional cuisines.
Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Roti Recipe

  • Whole wheat flour (atta) 2 cups

  • Salt to taste

  • Oil as required

Method

Step 1

Combine wheat flour, salt and 1 teaspoon oil in a parat. Mix well and knead into a soft dough using water, at intervals. Apply little oil on the dough, cover with a bowl and set aside to rest for 15-20 minutes.

Step 2

Divide dough into equal portions shaped into balls. Roll out balls into large discs. These are rotis.

Step 3

Heat a non-stick tawa. Place a roti on it and cook for 2 minutes on medium heat. Flip and cook again on the other side for 2 minutes. Remove roti from tawa, place on open flame and cook till it puffs.

Step 4

Serve hot.
