Why is it that when you are stuck at “what should we cook today” the answer is always “make some aloo!” Potatoes are like this…extremely popular and have multipurpose usage.

And did you always think that eating a potato will make you fat?
Well, don’t – it is a surprising source of vitamin C and provides useful amounts of starch, thiamine and niacin and around a hundred grams will provide about eighty calories.

Ingredients for Potato Bhaji Recipe

  • Potatoes 6-7 medium

  • Musterd seeds 3 tablespoons

  • Mustard seeds 1/2 teaspoon

  • Curry leaves 10-12

  • Split black gram skinless (dhuli urad dal) 2 tablespoons

  • Dry red chilies,broken into 2 2 whole po

  • Onion,sliced finely 1 medium

  • Turmeric powder 1/4 teaspoon

  • Salt to taste

  • Coconut,scraped 1/2 cup

  • Fresh coriander leaves,finely chopped 2 tablespoons

Method

Step 1

Heat oil in a kadai. Add mustard seeds and let them crackle. Add curry leaves and urad dal and sauté till dal turns light brown. Stir and add red chillies, sliced onion and sauté till translucent. Add turmeric powder.

Step 2

Stir well, add potato cubes and salt. Stir well and cook covered for five minutes on low heat till the potatoes are done. Add scraped coconut and stir with light hand.

Step 3

Remove from heat. Garnish with chopped coriander leaves and serve hot.
