Ingredients list for Orange Raisin Muffins
- 1 tablespoon Orange Squash
- 1 cup Refined Flour
- 1 teaspoon Orange rind grated
- 1/4 cup Raisins
- 1/2 teaspoon Soda bi carbonate
- 1/2 cup Butter
- 1/3 cup Castor sugar
- 1/2 cup Condensed milk
- 1/3 cup Fresh cream
Method
- Preheat oven to 180°C.
- Sift refined flour with soda bicarbonate into a bowl. Add raisins and mix well.
- Cream butter, orange squash, orange rind and castor sugar in another bowl till smooth and creamy. Add condensed milk and cream and mix well.
- Add flour mixture and fold lightly till well blended. Pour the mixture into greased cupcake moulds.
- Place the moulds on a baking tray, place the tray in the preheated oven and bake for fifteen to twenty minutes.
- Remove from oven, cool down to room temperature and remove the muffins from the moulds.
- Arrange on a serving plate and serve.
