Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Nihari Masala Recipe

  • Green Cardamom 12-15

  • maze 4 tablespoons

  • Cumin seeds 4 tablespoons

  • Black peppercorns 25-30

  • Cloves 2 tablespoons

  • Cinnamon 4-5 inch piece

  • Green cardamom 5

  • Black cardamom 3

  • Mace 1 blade

  • Poppy seeds (khuskhus/posto) 4-5 tablespoons

  • Roasted chana dal (dalia) 4-5 tablespoons

  • Bay leaves 2

  • Nutmeg,grated 1/2 tablespoon

  • Dry ginger powder (soonth) 2 tablespoons


Step 1

Dry roast red chillies fennel seeds, cumin seeds, black peppercorns, cloves, cinnamon, green cardamoms, black cardamoms, mace, poppy seeds, chana dal and bay leaves for two to three minutes or till fragrant.

Step 2

Remove from heat and set aside to cool. Grind to a fine powder in an electric grinder.

Step 3

Add nutmeg and dry ginger powder and grind again for half a minute.

Step 4

Sieve the mixture and store in the refrigerator in an airtight jar.
