Middle Eastern cuisine comprises of food eaten by the people of the various countries of the Middle East. The cuisine of the region is diverse while having a degree of homogeneity.  Some commonly used ingredients include olives and olive oil, pitas, honey, sesame seeds, dates, sumac, chickpeas, mint and parsley.

Prep Time : 11-15 minutes

Cook time : 51-60 minutes

Ingredients for Mjadarah Recipe

  • Masoor Dal rinsed 1 cup

  • Rice soaked and drained 1 cup

  • Salt to taste

  • Black peppercorns to taste

  • Cumin powder 1/2 teaspoon

  • Ghee 2 tablespoons

  • Onions sliced 4 medium


Step 1

Put lentils in a deep pan, add three and a half cups of water and bring to the boil for a few seconds. Let them simmer for twenty minutes. Add salt, pepper, cumin powder and drained rice. Continue to simmer, covered, for twenty more minutes.

Step 2

Meanwhile, heat the ghee in a separate pan. Fry onions till dark brown. Remove the onions with a slotted spoon and set aside. Add the used ghee to the lentil mixture, stir gently and cook for five more minutes.

Step 3

Empty into a dish, cover with the fried onions. Serve hot or cold with salad or yogurt.
