Minted Pea Soup Green pea soup with goodness of mint This recipe is from FoodFood TV channel By Sanjeev Kapoor 04 Mar 2017 in Recipes Course New Update Main Ingredients Green peas, Mint leaves Cuisine Italian Course Soups Prep Time 16-20 minutes Cook time 16-20 minutes Serve 4 Taste Mild Level of Cooking Easy Others Veg Ingredients list for Minted Pea Soup 2 cup Green peas Thawed, frozen 5-6 Mint leaves 1 teaspoon Oil 1 medium Onion 2 cloves Garlic to taste Salt 1/2 teaspoon Black pepper powder 2 cup Vegetable stock 2 cups Milk 1 Lemon thinly sliced Method Heat oil in a non stick pan. Chop onion and garlic and add to the pan and sauté lightly. Add green peas, salt, pepper powder and 1½ cups vegetable stock and cook till peas are soft. Strain and reserve the stock. Cool the peas and put into a mixer jar. Add mint leaves and remaining cold stock and grind to a smooth puree. Pour the puree into the pan, add the strained stock and mix well and heat. Add milk and mix. Cook till it comes to a boil. Pour into individual bowls and serve hot. If you want you can serve the soup with a slice of lemon.
